How to Cook Shirataki Noodles with Garlic Butter & Parmesan

Shirataki noodles, often referred to as "miracle noodles" or "zero-calorie noodles," are a game-changer for anyone on a low-carb, keto, or diabetic-friendly diet. While their preparation can seem a bit tricky at first, this garlic butter and parmesan version transforms them into a creamy, satisfying dish with minimal carbs and maximum flavor.

Ingredients

  • 1 pack (7 oz) shirataki noodles (spaghetti or angel hair)
  • 1 tbsp unsalted butter
  • 2 garlic cloves, minced
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 3 tbsp grated Parmesan cheese

Instructions

1. Rinse the Noodles Thoroughly

Place shirataki noodles in a colander and rinse under cold running water for 2–3 minutes. Toss them occasionally to help remove the natural odor.

Optional Tip: Use kitchen scissors to cut the noodles into shorter strands for easier eating.

2. Microwave to Improve Texture

Place the rinsed noodles in a microwave-safe bowl and microwave on high for 2 minutes. This step helps firm up the texture.

After microwaving, blot the noodles dry with paper towels to remove excess moisture.

3. Sauté with Garlic & Butter

In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

Add the noodles, salt, and pepper. Stir-fry for about 5 minutes, until the noodles turn slightly opaque and are well-coated with garlic butter. They should no longer have a rubbery or squeaky texture.

4. Add Parmesan and Serve
