Creamy Garlic Shirataki Noodles with Mushrooms

Ingredients

  • 2 packs shirataki noodles (spaghetti or fettuccine style)
  • 2 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 3 cups assorted mushrooms (e.g., shiitake, oyster, button)
  • 1 tsp almond flour
  • Pinch of dried parsley
  • ¾ tub (approx. 150 ml) thick cream
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 1 tsp olive oil (optional for sautéing)
  • Fresh parsley, finely chopped (for garnish)

Instructions

  1. Prep the Shirataki Noodles
    Drain and rinse the shirataki noodles thoroughly. Add them to a dry frying pan on medium heat and cook until they start to "whistle" — this sound indicates excess moisture is evaporating. Remove from heat and set aside.

  2. Sauté Garlic & Mushrooms
    In the same pan, melt butter and add minced garlic. Sauté until fragrant (about 1 minute). Add the mushrooms and stir to coat in garlic butter. Cook for 5–6 minutes until golden brown and slightly crispy. Remove mushrooms, leaving the buttery oil in the pan.

  3. Create the Cream Sauce
    Add almond flour and dried parsley to the pan. Stir in the cream to form a thick, silky sauce. Season with salt and pepper to taste. Simmer for 2–3 minutes.

  4. Combine & Serve
    Return the mushrooms and noodles to the pan. Stir to coat evenly in the sauce. Heat for 1–2 more minutes until fully combined and warmed through. Plate hot and garnish with fresh parsley.
